Meatballs



Most Amazing Meatballs Ever.

Ever. Ever.

Paul told me he's never eaten better.
My sister thought they melted in the mouth.
I am having a hard time not thawing out the remaining 2lbs of meatballs and eating them all.
The boys loved them too, but that's not saying much. They like anything that goes in their mouth and has flavor.

I don't have an actual recipe for these as I saw them on a TV show and was inspired to try my hand at them - but they are so, so easy. Just keep adding the ingredients til it smells good.

I used:
1 lb ground beef
1 lb ground sausage

Mix it all together. Kitchen gloves are nice for this part.

In a separate bowl I mixed:
bread crumbs - 5 slices of homemade bread dried in the oven and crumbed in the food processor
Half and half cream - maybe 1/4 cup? Not certain. Enough to mix to a dough like consistency.
Salt
Pepper
Italian Seasoning
Nutmeg

When I had the dry/cream ingredients mixed to a dough like consistency I added it to the mixed meat bowl and mixed it really well by hand. Again, kitchen gloves are the best for this!

I then rolled the meatballs, placed them in melted butter in a frying pan for a few minutes per side and then finished cooking them in the oven.

Oh, and I lined the baking sheet with onions first so they would cook on top of them and pick up a light flavor.

Next time I make these I am going to attempt exact measurements and will share. But really, I don't think you can mess these up. If they're too runny add more bread crumbs Too dry add more cream. If you think they lack flavor cook up one or two first and taste test and then adjust the seasonings.  

We snacked on a few yesterday afternoon and the rest I stuck in a freezer bag for future meatball subs - one of our favorite easy meals!

Also an easy way to sneak in spinach or other veggies in very small quantities.

I use a variation of yours and add 2 tablespoons fine chopped cooked frozen spinach. Nobody knows!
