I adore cinnamon, and this yummy snack is perfect for that addiction :) My friend served this last week, and I think everyone took the recipe home.


1 1/3 cup peeled, cored and diced apple
1 tsp lemon juice
2 tsp brown sugar
2 tsp apricot preserves
1/8 tsp cinnamon

Mix all ingredients together and place in the fridge to chill.


5 (6 inch) flour tortillas
2 TBSP melted butter (I just used cooking spray)
1/2 tsp cinnamon
1 1/2 TBSP sugar

Brush tortillas with butter (or just spray them with cooking spray!!)
Cut into wedges
Arrange on a greased baking sheet
Sprinkle with cinnamon and sugar
Bake at 350 F for 10 minutes

Really, they are so simple and so yummy! For appearance sake I think it would work a lot better to mix the cinnamon and sugar together and then sprinkle on top, but I was too lazy. And I more than doubled the cinnamon... probably was more like four times the amount. I love cinnamon.

Judah looked at these pictures and said "Mmmm!" What more do you need to convince you to make these?

And they have to be healthy... it's apples after all!
